How to Make Carolina Cafe’s Sweet Potato Biscuits

Ron Hines, the longtime owner of Cameron Village hotspot Cafe Carolina, shares just how to make this Southern staple with a North Carolina twist.

“Nothing too complicated,” says Ron Hines, Caroline Cafe owner, of the cafe’s beloved Sweet Potato biscuits. They’re made fresh seven days a week with just three simple ingredients. “But there’s a little science to it.” Below, he shares the surprisingly simple recipe.

Cafe Carolina’s Sweet Potato Biscuits

Makes 17

Ingredients

  • 4 cups Bisquick
  • 1 cup brown sugar (reserve half for topping)
  • 2 cups canned mashed sweet potatoes

Directions

Pre-heat a convection oven to 325 degrees. Combine the Bisquick and brown sugar and, with your hands, work through any clumps. Add the mashed sweet potatoes, then hand-mix until batter is evenly incorporated. Use an ice cream scoop to scoop biscuits onto a baking tray. Top each with a generous sprinkle of brown sugar and bake for 18 minutes.
